IMU Food Services Director Wins National Culinary Challenge

Barry Greenberg, executive chef and director of Iowa Memorial Union Food Services, won the National Association of College and University Food Services (NACUFS) National Culinary Challenge on Thursday, July 12, in Seattle. Greenberg qualified for this competition by winning a regional event in March.

The NACUFS Culinary Challenge is a sanctioned American Culinary Federation event, the world's largest association of culinary professionals. Two certified master chefs and one certified executive chef judged the competition. The format for the NACUFS event showcases college and university chefs using a common ingredient; this year's ingredient was tofu. Greenberg won the competition with six tofu items: an Asian bento box that included tofu sushi, seaweed and tofu salad, edamame shumai, smoked shiitake spring rolls, mango and ginger tofu smoothie, and miso soup.

Greenberg, a certified executive chef, graduated with culinary and management degrees from Johnson and Wales University in Providence, R.I., in 1992. Greenberg moved to Iowa City and began his career with IMU Food Services 15 years ago. He started as a production assistant manager in the main kitchen, primarily focused on catering and retail food preparation. Promotions within the department allowed Greenberg to work as a restaurant chef, production chef, assistant director and in his current position as director/executive chef of Food Services at the IMU.

Along with his talented crew of chefs and food service professionals, IMU Food Services oversees all catering operations, presidential dinners, Lunch with the Chefs, and game day operations at the new club and suites at Kinnick Stadium. IMU Food Service also provides retail food operations at 12 restaurants and convenience stores on campus.
